Five years ago, it was hard to find a decent restaurant in Split, now the food scene is really starting to boom with restaurants all trying to step up in the gastronomy game. One thing, however, that Split is still desperately lacking is an international offering.
Peter Stoyanov, aka “The Sushi Guy” came onto the scene in Split and started working at Bota Šare sushi restaurant. As well as working in the restaurant, Stoyanov also did private events and consultations and I would say that in a short space of time he really made an impact on the food scene here; particularly in regards to education about what sushi really is.
Though Stoyanov has moved on, it seems that the sushi story will continue thanks to Nikola Čelan who has just signed a contract with the franchise ‘Sushi by A’s’ and has started stocking to-go sushi in Kozum in Sirobuja as well as doing deliveries. That’s right, your sushi fix can now be collected in Konzum or delivered to your door which is another small blessing because – fast, healthy to-go options in Split are basically non-existent and no, burek is not a food group.
I asked Čelan to tell me a little more about his business concept and plans.
After a series of parties and events during 2017 which included Split’s sushi tribe, I’ve decided to reach another level of my contact with the sushi scene in Croatia and abroad. Having learned the basics of sushi-making and production mostly from the adopted international chef “The Sushi Guy” Peter Stoyanov and gaining experience in tastes during my trip to western countries from NYC and London to Reykjavik and Copenhagen; now I have consolidated my business intentions with my adoration for Asian cuisine – for which I consider sushi the cream of the crop.
Following their franchise offer, I’ve signed a contract with the Croatian developed, USA based brand – ‘Sushi by A’s’ and started packing products within Konzum supermarket in Sirobuja, just outside of Split’s easternmost city border. So far, it is going well as I have immediately employed one chef, engaged another and I have started doing deliveries myself. With the company’s supervisor Mrs Meri Bedalov Smoje, we have already adopted methods and standards of the wide variety of the A’s signature products, including Golden Dragon Roll, Marine roll, Spicy tuna and Salmon roll… As a distinct product savvy consumer, besides the firm’s signature materials and combinations, I myself, would recommend the salmon and smoked salmon products – since I was personally astounded with how it looked and tasted the first time I opened the franchisor’s supply.
I’m waiting for two more deliveries by Konzum within the city centre in the near future but since the moment of the inception of my own business – branded as Red Pill ltd, I have decided not to suffer any indecisiveness nor hesitation concerning business inquiries. So, while still expecting branding completion of the production section at Sirobuja, followed by some greater opening event, I’m connecting myself with my future customers by delivering product directly to their doors myself. That way, I’m making sure they get to experience the quality of the franchise’s offering. Very soon, I expect to bring them all to the venue where they can enjoy the full variety of the menu and I am also excited to introduce this product to the locals of Sirobuja centre, who know very little about the sushi culture, taste and philosophy in general.
It is really fantastic to see some initiative and entrepreneurship sprouting up in Split, I would be thrilled to see more such businesses and ideas coming to life. I wish you luck Čelan and look forward to following the success of this story.
