Through Croatia with All Senses: From Sights to Bites

July 10, 2022 - As the Croatian peak season has started to roll out, tourists are arriving from all over the world, and most of them with a list of sights they must-see. Of course, Croatia is blessed with its gems and beauties every step of the way, but let me start this series by giving some insight into some delicate bites on the Adriatic. Activate your sense of taste and read through the culinary highlights that await you. 

Cheese

Regardless of the occasion, a delicacy that will surely be a good choice is cheese. Especially in Croatia, which has several award-winning local kinds of cheese, one should definitely grab the opportunity and order a plate. Probably the most famous is Pag cheese or 'paški sir’ made from the milk of local sheep on the island of Pag. Another very popular option would be cottage cheese and ‘prgica’ both made of cow’s milk or the native Lika ‘škripavac', which combines sheep's and cow's milk. And let's not forget, 'sir iz mišine', an unusual type of goat's milk cheese that is traditionally produced in the areas of Dalmatian Hinterland and Velebit. It will surprise you with its sheepskin packaging and distinct flavour.

Tuna

While staying on the Croatian coast, you'll probably find grilled fish on your table at least once, usually served with potatoes and chard. However, what should be pointed out is that several experts consider the Adriatic Sea to be the optimal home to one specific type of fish –tuna. Some even declared the Adriatic tuna steak one of the best in the world. Moreover, you can actually find many other dishes using tuna. So, look out for it at a local restaurant and order one of the delicious tuna specialties.

Squid

Besides fish, one should not visit the Adriatic coast and not try squid. Fried or grilled, both versions are a great catch and available on almost any menu. They are mostly served, again like fish, with potatoes and chard on the side. Just squeeze some lemon on the top and enjoy this typical taste of the Adriatic coast.

Seafood, in general

One automatically associates the sun, the sea, and the Adriatic coast as the best parts of summer in Croatia. But seafood should also join this list if one really wants to enjoy their vacation tastefully as well. From prawns to clams, oysters, and mussels, they are all available fresh in many local restaurants daily. These specialties can be served in various ways, but most often as a seafood risotto or sometimes even with homemade pasta.

Black risotto

As the pot of gold at the end of this 1st part of the series, the famous black risotto must be mentioned. Yes, its color is black not gold, and yes, it may not look as tasty as all the other delicacies, but one thing is for sure - those who have fallen in love with this specialty certainly think of it as golden. This risotto made of squid, squid ink, and local herbs will delight with its specific intense flavor. But a little tip on the side, watch your smile when trying this culinary experience because the black ink will probably make your lips and teeth a bit more colorful for a moment.

After all, "love goes through the stomach" is not said in vain. In fact, well-prepared local dishes will surely strengthen your love for Croatia, so bon appetite - or how we say, “dobar tek”.

Direct Help: Order From a Petrinja OPG, Small Producer, Family Farm

January 9, 2021 – The area affected by the devastating earthquake of 29 December 2020 is mostly rural. People there live off the land. They employ others at family farms and as small scale producers. Ordering from a Petrinja OPG or one from the surroundings directly helps families and the economy of the earthquake-affected area, so here's a list detailing them

Alongside the outpourings of sympathy and promise of prayers, since the large earthquakes of December 2020 struck Sisak-Moslavina County, Total Croatia News has been inundated with requests from regular readers and other asking how they can directly and effectively help. TCN has tried to answer all enquiries the best we can and has striven towards directing donors to the best-placed outlets.

Certainly, the rebuild of the communities and economies in places like Petrinja, Glina, Sisak and hundreds of surrounding villages, hamlets and settlements will take months, even years. As TCN discovered after we visited the affected region one day after the earthquake, this area is predominantly rural. People here live off the land, from agricultural endeavours. Small producers and family farms make up much of the economy. In a year where such producers have been hard hit by travel restrictions and other aspects of the pandemic, the livelihoods of many have been shattered by the subsequent earthquake.

In a pro-active, helpful and exhaustive piece of data collection, writer Antonia Dobrota and the team at Croatian-language tourism portal cimerfraj have over recent days come up with an inspired suggestion of how [people can directly help the economies and people of the affected region. They have published a list of as many small producers, family farms and Petrinja OPG producers, plus those in surrounding areas.

By ordering food, produce and goods like pottery from this list, people can spend their money directly within the economies of the affected area – no suspicion, no doubt, no middlemen, no staffing costs deducted. It is an inspired decision to construct (and continually update) such a list. Bravo, Antonia and cimerfraj! Several Croatian-language media outlets have since republished the list. Total Croatia News is pleased to do so in English. We warmly encourage its use, not only now, but in the months that follow.

Being small producers and family farms, most of the producers below are not only vital to others in the local communities (by offering employment opportunities), their goods are almost exclusively organic and produced in a traditional, eco-friendly manner. Cres to Get Cheese Factory Worth More Than Five Million Kuna

The desire is to breathe some life into, and renew the old tradition of island sheep farming on the island of Cres in the Kvarner region through cooperation with local OPGs and cheese factories.

As Marta Duic/Poslovni Dnevnik writes on the 2nd of April, 2019, in the village of Loznati on the beautiful island of Cres on Monday, construction began on the Loznati agricultural cooperative.

As the co-manager Bruno Žic explained, their goal is to restore old fame to island livestock breeding and continue to maintain the tradition of sheep farming that has been present on the island of Cres for a great many years.

"In the seventies during the last century, this place had a cheese factory and we decided to make our contribution to the preservation of that tradition. The Loznati agricultural cooperative is a small family cooperative, we have seven members and we're open to cooperate with small OPGs and cheese producers. Our desire is to bring as many people back to sheep farming as we can, we're very ambitious and we will try to restore the former numbers,'' stated Žic.

As he claims, the capacity is 500 litres of milk per shift, ie an impressive 1000 litres per day, and the value of the investment stands at 5.600.000 kuna.

"Of the total investment, two million kuna is non-refundable because we have secured it through EU funds, and the remainder is partly our money and partly from an HBOR loan," added Žic.

When construction works are completed, the Cres site will occupy a total area of ​​540 square metres.

Agriculture Minister Tomislav Tolušić was present at the opening ceremony on Cres.

The Faculty of Agriculture in Zagreb has dealt with the technology for us, and on that basis we started to realise the whole project and the [involved] works. The HACCP standards required in production will be implemented here with us, and the cheese factory itself will be a combination of modern and traditional. We tried not to ruin the looks of the village,'' concluded Žic.

Intangible Heritage of Croatia – Cheesecloth Cheese – Sir iz Mišine

December the 7th, 2018 - The intangible heritage of Croatia is complex and varied, so let us take a look at yet another one, which involves cheese. The preparation of cheesecloth cheese, locally called sir iz mišine, is a long tradition in Dalmatian inland, Dinara, Velebit, Lika, and the western Herzegovina area.

When the initial production of this piece of intangible heritage of Croatia first began isn't known, but even the ancient Illyrians prepared this type of sheep cheese. One of the theories says that production began when milk stored in sheep paunches accidentally started the fermentation process. This kind of milk had whey and cheese, which during that time, became a tradition to make.

The way of making the cheese hasn’t changed much from the beginning. Back then, the cheese was made from whole sheep milk but today it's done with skimmed sheep, goat, or cow milk too. It is preserved in sheep or goat paunches which gives it its typical smell and spicy flavour. It is usually produced during summer from extra sheep milk and it can be consumed from autumn onwards.

In order to make this cheese, one should follow several procedures. First, the paunch should be appropriately prepared, then the milking should be done and milk preparation should follow right after it. The whey should be prepared too. Making and preparing the sheep or goat paunch is important as it ensures good cheese making. The paunch should be properly washed, disinfected and dried from 15 to 30 days.

Knowledge and skill with regard to this craft is traditionally inherited from generation to generation. When everything is ready, the brewing process can start and the product can be stored in the paunches. Finally, the stored cheese needs to age, and then it is ready.

The brewing begins right after the milking and the brewing time depends on the temperature (ranges from 31-35°C to 35-40°C) and the strength of the whey. When the mixture forms a certain structure, the first layer is turned over to even up the temperature of the whole batch, then, it is cut into cubes and should rest until the whey turns into a greenish – yellow colour.

This cheese mass is then put in cloths and subsequently pressed.

After pressing the cheese, salt is added until there is enough cheese to be put into the paunch. If the paunch is filled with cheese one-time only, this ensures better quality. When the paunch is filled, the cheese is shredded and then crumbled. It is important to remove all the air from the paunch to ensure that it matures in controlled conditions (12-15°C). It takes 2-3 months to achieve its specific characteristics and to be ready for consumption.

To produce one kilogram of cheese, you'd need 7-8 litres of skimmed milk or 7-9 litres of fresh sheep or mixed sheep/cow milk. To produce 12 to 15 kg of cheese and 7-8 litres of slurry, you would need 100 litres of whole sheep's milk. The mature cheese is then taken out of the paunch and stored in low temperatures with the appropriate humidity and level of hygiene.

The area where this cheese is made is usually agricultural regions where you can find livestock like sheep, lambs, and goats. To keep this tradition going and in order to continue this type of cheese production, it is important to help to preserve small family businesses and agricultural estates which are involved in making it.

Nowadays, there are some differences in production as the sheep and milk used are different from the traditional type. In addition, technology is used to produce the cheese which makes it higher quality in the modern day.

Despite technology's influence, it is important to preserve most of the traditional ways of making the cheese active by passing down knowledge of this tradition. The final product is often a very rare find on markets and in stores but it can be found on agricultural estates and villages where they still make it.

Split's Best Wine Bars Going Into the 2016 Summer Season

When it comes to drinking wine, the people of Split are no strangers. Whether they be drinking a cold white during a hot summer lunch, or opt for a bold red in the winter, I’m sure they’d like to consider themselves aficionados in the area. Many families in the Dalmatia region produce their own wines, and with the ever growing population of Croatian winemakers and vineyards popping up along the Dalmatian coast, it’s no surprise that Split has more than a few wine bars for your drinking pleasure. Here are some of the most popular wine bars going into the 2016 season - establishments where locals and tourists will find a safe haven to wine and dine.

 

Perhaps the most popular after the last summer season is Wine and Cheese Bar Paradox. Having opened in June of 2012, Wine and Cheese Bar Paradox was the first official wine bar in the city. Although not a full service restaurant, this wine and cheese bar offers over 100 wine labels (with over half of the wines served by the glass) as well as small bites including cheeses, prosciutto and olives. Located just a few minutes outside of the palace on Poljana Tina Ujevića 2, the staff are more than knowledgeable and the ambiance is set with custom designed elm and oak furniture placed amongst the exposed stone walls. They also offer the largest selection of artisan cheeses in Croatia!

 

Next we have Zinfandel Food and Wine Bar, entering the wine bar scene in May of 2013. With over 100 bottled wines and an extensive list of 30 wines by the glass, Zinfandel’s wines are delivered either straight from the vineyard from Croatian’s most renowned estates or from boutique winemakers. Their menu is focused on seasonal ingredients with an ever changing menu depending on the season. They also offer an a la carte menu with a modern twist on much loved Dalmatian classics. Located within the palace on Ulica Marka Marulića 2, you can’t miss it!

 

Lastly we have La Bodega Wine Bar, having opened in Split in the summer of 2015. With previous locations in Zagreb, Zadar, and Dubrovnik, it was just a matter of time before they opened their doors to the people of Split. La Bodega is a premium wine cellar, fitted with superb local wines and snacks of quality domestic hams and cheeses. The largest of the three on this list, La Bodega is located directly around the corner from Voćni Trg on Mihovilova širina 1. This central location is always filled with patrons and lively music. Another perk? They also serve a continental brunch!
