June 23, 2018 - Sweet Korčula, an island with a seemingly endless supply of fabulous traditional home-made cakes and desserts. We are very grateful to Franica Tasovac for allowing us to serialise her excellent books called Sweet Korcula, Sweeties of Korcula Grannies (in English). It is a collection of no less than 30 ancient recipes for Korcula cakes and desserts, lovingly put together into a book. A delightful souvenir or gift for gourmet friends. Franica has kindly allowed us to serialise the recipes on TCN, and we will be bringing you a recipe a week from the kitchens of Korcula's grandmothers throughout the year. 500 g of potatoes
1.5 litre of water
1 teaspoon salt
500 g flour
7 g of yeast
2 tablespoons sugar
1 vanilla sugar
2 tablespoons brandy (grape brandy)
100 g raisins
zest of one lemon and orange
50 g almonds (chopped)
1 litre oil for frying
sugar
Cut cleaned potatoes into cubes and put to boil in salted water. Pour the flour in another bowl. Drain the boiled potatoes, separate 700 ml of water and pour it over the flour, mixing in uniform mass. Allow to cool slightly. Squash potatoes as if for purée and let it cool down a bit. In cooled down flour, add yeast, both kinds of sugar, brandy, lemon and orange zest and crushed potatoes. Mix all well and continue to beat with wooden spoon until the dough begins to separate from the vessel. The mixture will be thick and sticky.
Finally, add the almonds and raisins, stir and leave covered for one hour for the blend to raise.
Pour oil in frying pan. Grab the dough with hands, squeeze the fist, and between the thumb and forefinger, take with spoon a little dough and dip in hot oil to fry until golden brown.
Take out fried prikle on absorbent paper and sprinkle them with sugar when drained.
