Chef Robert Hromalić, Time Restaurant to Open Exclusive Pastry Shop in Zagreb

A breath of fresh air on Zagreb's pastry-making scene.

Zagreb’s Time Restaurant & Bar and chef pâtissier Robert Hromalić have partnered up to open one of the most ambitious Zagreb patisseries on September 18, Kult plave kamenice reports on August 26, 2017.

Foodies with a sweet tooth will be thrilled to try classic Croatian and international cakes with a modern twist, presented as luxury products.

Robert Hromalić has been in the gourmet business since he was 17, and he found his calling in patisserie. Unfortunately, there was no place in Croatia where he was able to pursue his passion, so he went to France and finished the prestigious École Grégoire-Ferrandi, the French School of Culinary Arts in Paris, one of the leading culinary institutions in the country. He was taught by confectionery superstars including Chefs Cedric Grolet or Yann Couvreur and his Parisian cake shop, where he was in charge of the viennoiserie.

He decided to come back to Croatia because he believes that his knowledge and talent could be recognised better here than in highly competitive Paris. Before leaving for Paris, he worked with Ana Ugarković, Dino Galvagno, Aleksandar Kajtazi (Paradigma) and Miroslav Lisica (Noel).

“There are many talented chefs here which I highly appreciate and I believe that their cuisine is world-class, but our market was simply not ready for their projects,” Mr Hromalić said in an interview for Slatkopedija.

Founders of Time, Davor Bienenfeld and Matej Đorđević, think the time has come, architect Ante Vrban is in charge of the design, so they plan on bringing a breath of fresh to the Croatian pastry-making scene and setting new standards for its future expansion and we can't wait to see what they have in store.
